After training at a ramen restaurant in Sapporo, the owner honed his skills at an Italian restaurant before going independent and opening Menya Kohhariku. The soup is made from three types of soup: pork bones, chicken bones, and seafood, and the miso sauce is a blend of two types of Hokkaido red miso with different degrees of ripeness and white miso. It goes perfectly with medium-thick curly egg noodles made with egg.
