Ichimonji Ramen is a ramen that stands out from the traditional salt ramen. For the base of the soup, we used a whole chicken and kelp from Minami Kayabe. Also, please pay attention to the special miso ramen. The soup is made by slowly simmering pork tips for 10 hours to create a rich and impactful flavor. In order not to overpower the soup, we use medium-thick curly noodles. Our miso is made with soybeans grown in southern Hokkaido and is fully aged to bring out its maximum flavor.
