``We want to preserve delicious fish grown in the San'in area for a long time.'' Our passion for Abunosora came together with the sake lees produced when brewing Daiginjo sake from Sumikawa Sake Brewery, a sake brewery in Yamaguchi Prefecture that produces the famous sake ``Toyo Bijin.'' The gadfly fish pickled in sake lees is ready. When baked, it has a fruity and aromatic flavor that will whet your appetite. You'll be surprised by its rich aroma and crisp texture. Ethyl caproate, a unique ingredient abundantly contained in Daiginjo, has a gorgeous apple-like aroma called ``Ginjo-ka'', which has a relaxing effect and a very pleasant scent.
